The grapes for our “Signature” Chardonnay are harvested from a vineyard in the southern reaches of the Napa Valley, where cool marine breezes enhance the vibrant fruit flavors of this varietal. This wine is produced predominantly from the Dijon clone, which is noted for its exceptional body and bright notes of pear and quince. The juice is entirely barrel fermented in one year-old French oak. For an additional layer of complexity, 25% was fermented using indigenous, or wild, yeast. During eight months of barrel aging sur lie, 100% of the Chardonnay underwent malolactic fermentation. It is bottled without fining or filtration to preserve its exquisite character.
Inviting aromas of summer melon, pear and quince greet the nose. Floral and mineral notes add complexity, along with touches of brioche and nutmeg. The impression of perfectly ripened fruit continues on the palate, blended with crème fraiche and lemon custard. Presenting simultaneous fullness and vibrancy, this Chardonnay shows excellent texture and balance.
